I expected to have fun at Disney World, but I didn't expect their food to be as good as it was! Epcot, known for its eating around the world tour, had some of my favorite food out of all the parks. Let's jump into the best things I ate! 1. caramel butter barIf you're a fan of blondies, you will love this butter bar! We found this yummy treat at Karamell-Kuche in Germany. It was the perfect combination of salty and sweet! After we picked our treats, we headed outside to snack. Germany was so pretty in the evening! The buildings were crowned with terra cotta steeples and adorned with colorful painted shields. I highly suggest stopping at Karamell-Kuche, it definitely has some of the best food in Epcot! 2. dumplingsMy husband, Trey, and I love dumplings! We'd probably eat them for supper every night if we could. Disney World had some of the best dumplings I've had! Lotus Blossom Cafe in China is a great place to snag really delicious dumplings. Their soy sauce to dip them in was next level too! Lotus Blossom Cafe was SO good. This is an awesome spot to grab dinner, their entrees looked super appetizing as well! They have a decent amount of seating area, so this could be a good spot if you're with your family. If you're not sure what to eat at Epcot, stop at Lotus Blossom Cafe! TIP: Fan of fried dumplings? Don't miss out Mr. Kamal's stall in the Asia section of Animal Kingdom! 3. kakigoriThis thing takes me back to the days where I'd spend hours at the pool with my sister! It was like the best day ever too when we had an extra 50 cents to get a rainbow snowcone, which meant extra flavoring. Kakigori is like that, but much sweeter, especially when you add sweet milk on top! I ordered the strawberry and even though I wasn't sure my first few bites, I was hooked once I got used to the taste. You can find Kakigori in Japan at the Kabukicafe! This is one of the best Epcot snacks hands down. 4. cheese danishIf you're looking for a BOMB breakfast, you don't even need to head to a sit down restaurant. This cheese danish from Joffrey's Coffee & Tea was one of the prettiest and most delicious things I ate on this trip! It was super filling and most items at Joffrey's are super affordable, compared to breakfast at quick services around Epcot. Ugh, I wish I could buy these in bulk! Joffrey's has amazing coffee too, so it really is the perfect morning stop before you hit the rides. Eating at Disney was so fun! So, don't eat before you go! I love to reflect, overthink, and write down just about everything. As I get older, I'm finding how important it is to be extra kind to myself. The last two years in my house have been filled with heartbreak and chaos. I thought it'd be fun to envision what 2024 could be together... As you know, multiple surgeries come with multiple costs. I think we've finally reached a point where we don't receive a hospital bill every time we check the mail. That being said, I had to pause a bit on traveling far, in order to pay off the bills. I have about 11 states left to visit and I'd love to work on that list in 2024. Right now, I've been planning a trip to Savannah, GA and then maybe a loop around the New England states! I've missed traveling, but it was nice to explore places in my home city I haven't been to yet. Because of it, I've written more guides about Omaha, NE and I just keep finding cooler things to do here. I don't mind the dark winter nights, but I do find myself feeling sleepy earlier than normal. One thing I've really been enjoying is doing yoga in bed. I feel so calm after and it really reduces my anxiety the following day. I'd love to continue that in 2024! I've noticed too, I'm much more motivated to do push-ups and sit-ups after yoga. I don't go crazy, but I do play a song or two and see what I can accomplish. To me, it still feels like 'yoga' and not a 'workout' which helps me show up more. I am a big fan of online church. I have watched Elevation consistently for years now! However, a couple months ago I found a church I really like near our home and it has been very nice to worship in person and be surrounded by other people. <3 I'd love to keep going to that church this year and figure out how to avoid working on Sundays again. I have a full-time job now and I am still figuring out the best way to frame my weekends. My goal is to work on Bliss Junkie a couple hours each Saturday, but when we leave town or I get sick, I don't have a plan. I hope to work out those kinks this year! As I think of the rest, I will continue to add to the list. For now, this is all I need. Being strict with myself has never worked in the past and many times goals have left me feeling disappointed for months. Love you guys - we will have a great 2024 ✨
